4 large flour tortillas

1 cup button mushrooms, sliced

1 cup baby spinach, roughly chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Start by setting your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Tortillas: Arrange the flour tortillas on the parchment-lined baking sheet. You'll create individual pizza bases with these.

      Sauté the Mushrooms: Heat a skillet over medium heat and pour in 2 tablespoons of olive oil. When the oil is shimmering, add the sliced mushrooms. Sauté for about 5-7 minutes or until they turn golden brown and their moisture has evaporated. Season with salt, pepper, garlic powder, and dried oregano. Then, fold in the baby spinach and continue cooking for another 1-2 minutes, just until the spinach is wilted. Remove the skillet from heat.

        Assemble the Pizzas: Take a generous tablespoon of marinara sauce and spread it on each tortilla, covering it evenly. Next, distribute the sautéed mushroom and spinach mixture over the sauce, making sure it's evenly layered. Finally, sprinkle crumbled feta cheese first, followed by shredded mozzarella cheese on top of each tortilla.
