6 slices of thick-cut brioche or challah bread

4 large eggs

1 cup whole milk (or your choice of milk)

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

A pinch of salt

1/4 cup melted butter for greasing the muffin tin

Maple syrup and powdered sugar for topping

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven warms, thoroughly grease each cup of a muffin tin with cooking spray or melted butter to prevent sticking.

    Prepare the Bread: Take the brioche or challah and cut it into small cubes, roughly 1-inch in size. Gather these cubes in a large mixing bowl and set aside for later use.

      Make the Batter: In a separate mixing bowl, crack the eggs and whisk them together with the milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if you're using it), and a pinch of salt. Whisk until everything is well combined and smooth.

        Combine: Carefully pour the egg mixture over the bread cubes. Gently fold the mixture with a spatula or wooden spoon, ensuring that all the bread pieces are well coated. Allow the mixture to rest for about 10-15 minutes, giving the bread time to absorb the egg mixture.

          Fill the Muffin Tin: Spoon the soaked bread mixture into each muffin cup, filling each about three-quarters full to allow for rising during baking.
