Ingredients

For the Chicken Tikka:

1 lb (450g) boneless chicken breast, cut into bite-sized cubes

1 cup plain yogurt

2 tablespoons tikka masala spice mix

1 tablespoon fresh lemon juice

1 teaspoon garlic paste

1 teaspoon ginger paste

Salt to taste

For the Melts:

4 small pita breads

1 cup shredded mozzarella cheese

1/2 cup fresh spinach leaves, roughly chopped

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Olive oil, for brushing

For the Sauce:

1/2 cup sour cream

2 tablespoons mayonnaise

1 teaspoon fresh lemon juice

Salt and freshly cracked pepper to taste

Instructions

Marinate the Chicken:

    - In a large mixing bowl, combine the plain yogurt, tikka masala spice mix, lemon juice, garlic paste, ginger paste, and salt. Blend thoroughly until well combined.

      - Add the cubed chicken to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and marinate in the refrigerator for a minimum of 1 hour, though overnight is recommended for maximum flavor infusion.

        Cook the Chicken:

          - Preheat your grill or stovetop grill pan to medium heat.

            - Thread the marinated chicken pieces onto wooden or metal skewers, remembering to soak wooden skewers in water for 30 minutes beforehand to prevent burning.

              - Grill the chicken for approximately 10-12 minutes, turning occasionally until the pieces are cooked through and exhibit a slight char. Once done, remove the chicken from the skewers and allow to cool slightly.

                Prepare the Sauce:

                  - In a small bowl, whisk together the sour cream, mayonnaise, fresh lemon juice, and season with salt and pepper to taste. Set aside for dipping.

                    Assemble the Mini Melts:

                      - Preheat your oven to 375°F (190°C).

                        - Carefully cut each pita bread in half to form pockets.

                          - Open each pita half and fill generously with the grilled chicken, a handful of mozzarella cheese, chopped spinach, and slices of red onion.

                            Bake:

                              - Arrange the stuffed pita halves on a lined baking sheet. Lightly brush the tops with olive oil for a crisp, golden crust.

                                - Bake in the preheated oven for about 10-12 minutes, or until the cheese melts and is bubbling with excitement.

                                  Garnish:

                                    - Once out of the oven, sprinkle the freshly chopped cilantro over the top of the melts for a vibrant finish.

                                      Serving:

                                        - Serve the Mini Chicken Tikka Pita Melts warm, accompanied by the tangy sauce for a delightful dipping experience.
