Ingredients

1 lb ground chicken

1 packet ranch dressing mix

1 cup shredded cheddar cheese

1 cup buttermilk biscuit mix

1/3 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 cup chopped green onions (for garnish)

Optional: hot sauce for drizzling

Instructions

Prepare to Bake:

    - Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or cover it with parchment paper to prevent sticking.

      Create the Chicken Mixture:

        - In a large mixing bowl, combine the ground chicken, ranch dressing mix, garlic powder, onion powder, black pepper, and paprika. Use your hands or a spatula to thoroughly mix until all the ingredients are well blended.

          Shape the Chicken Patties:

            - Form the chicken mixture into small patties, approximately 1 inch in diameter. You should yield around 12-15 patties.

              Cook the Chicken Patties:

                - Heat the olive oil in a large skillet over medium heat. Cook the chicken patties for about 5-6 minutes on each side, or until they are cooked through (internal temperature should reach 165°F) and golden brown. Once cooked, transfer them to a plate and set aside.

                  Prepare the Biscuit Dough:

                    - In a separate bowl, combine the biscuit mix with the milk, stirring until a soft and slightly sticky dough forms. If the dough is too wet, gradually add a bit more biscuit mix until it reaches a manageable consistency.

                      Roll Out the Biscuit Dough:

                        - On a lightly floured surface, roll out the biscuit dough to about 1/4 inch thick. Using a round cutter or a wide glass, cut out circles that are about 3 inches in diameter.

                          Assemble the Biscuit Melts:

                            - Arrange half of the biscuit circles on the prepared baking sheet. On each circle, place a cooked chicken patty followed by a generous handful of shredded cheddar cheese. Cap each with another biscuit circle, gently pressing down to secure the layers together.

                              Bake the Melts:

                                - Place the baking sheet in the preheated oven and bake the melts for 12-15 minutes, or until the biscuits are golden brown and the cheese has melted beautifully.

                                  Garnish and Serve:

                                    - Once baked, remove the melts from the oven and sprinkle with chopped green onions for a fresh pop of flavor. Serve immediately while warm, and drizzle with hot sauce if desired for an added kick.

Presentation Tip: Arrange the mini melts on a serving platter. You can place a small bowl of additional ranch dressing or hot sauce in the center for dipping to elevate the presentation and encourage a fun meal experience!
