For the Chicken Marinade:

1 pound boneless, skinless chicken thighs

2 tablespoons olive oil

2 tablespoons Greek yogurt

1 tablespoon fresh lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 tablespoon fresh lemon juice

Salt and freshly ground black pepper to taste

For Assembly:

12 mini slider buns or mini pita breads

Fresh tomatoes, sliced

Red onion, thinly sliced

Leafy greens (options: spinach, arugula, or romaine)

Prepare the Marinade:

    In a medium mixing bowl, combine the olive oil, Greek yogurt, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and black pepper. Use a whisk to blend the ingredients together until you achieve a smooth and uniform marinade.

      Marinate the Chicken:

        Place the boneless chicken thighs in the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap, then refrigerate for a minimum of 30 minutes. For the best flavor, allow the chicken to marinate for up to 2 hours.

          Make the Tzatziki Sauce:

            While the chicken marinates, prepare the tzatziki sauce. In a separate bowl, combine the Greek yogurt with the grated cucumber (make sure to squeeze out any excess liquid), minced garlic, chopped dill, lemon juice, salt, and black pepper. Mix everything together until smooth, then cover and refrigerate until you are ready to serve.

              Cook the Chicken:

                Preheat a grill or skillet over medium-high heat. Remove the chicken thighs from the marinade and place them onto the hot grill or skillet. Cook for approximately 5 to 7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken has developed a nice char. After cooking, allow the chicken to rest for 5 minutes, then slice it into strips.

                  Assemble the Sliders:

                    Take your slider buns or pita breads and cut them in half. Spread a generous layer of tzatziki sauce on the bottom half of each bun. Top with slices of grilled chicken, followed by fresh tomato slices, thinly sliced red onion, and a handful of leafy greens. Finally, place the top half of the bun over the fillings.

                      Serve:
