Ingredients

1 pound (450g) Italian sausage, casing removed

1 cup shredded mozzarella cheese

1/2 cup pizza sauce (plus extra for dipping)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes (optional for spice)

1 package (1 lb) refrigerated pizza dough

1 egg, beaten (for egg wash)

Olive oil spray

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Filling: In a medium skillet over medium heat, add the Italian sausage. Use a wooden spoon to crumble it as it cooks. Sauté until the sausage is browned and fully cooked, about 5-7 minutes. If there is any excess fat, drain it. Stir in the pizza sauce, Italian seasoning, garlic powder, and crushed red pepper flakes if using. Mix until everything is heated through, then remove from heat and allow to cool slightly.

Roll Out the Dough: Lightly flour a clean surface and roll out the pizza dough until it reaches a thickness of approximately 1/4 inch. Using a cookie cutter or the rim of a glass, cut the dough into circles that are about 4 inches in diameter.

Assemble the Pizza Pockets: Place 1-2 tablespoons of the prepared sausage filling in the center of each dough circle, then sprinkle a tablespoon of shredded mozzarella cheese on top. Be cautious not to overfill each pocket.

Seal the Pockets: Gently fold the dough over the filling to form a half-moon shape. Press the edges firmly together to seal, ensuring no filling escapes. For an extra secure seal, use a fork to crimp the edges.

Preheat the Air Fryer: Preheat your air fryer to 380°F (193°C) for about 3-5 minutes to get it ready for cooking.

Add Egg Wash: Brush the tops of each pizza pocket with the beaten egg to create a beautifully golden finish while cooking.

Air Fry the Pizza Pockets: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the sausage pizza pockets in a single layer, ensuring that they don’t touch. Air fry at 380°F (193°C) for 8-10 minutes, or until they turn golden brown and crispy. Depending on your air fryer’s capacity, you may need to cook them in batches.

Serve: Once cooked, carefully remove the pizza pockets from the air fryer and let them cool for a minute. Serve warm with extra pizza sauce on the side for dipping. For an elegant touch, garnish with fresh basil leaves if desired.
