Ingredients

1 cup chickpea flour (besan)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon garlic powder

1/4 teaspoon ground cumin

1 cup water (room temperature)

1 tablespoon olive oil (plus extra for cooking)

1/2 cup cherry tomatoes, halved

1/2 cup assorted bell peppers (red, yellow, and green), sliced

1/4 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/4 cup fresh spinach leaves

1 teaspoon dried oregano

Fresh basil leaves for garnish

Instructions

Prepare the Flatbread Base:

    - In a large mixing bowl, combine the chickpea flour, baking powder, salt, garlic powder, and ground cumin. Whisk together until all dry ingredients are well mixed.

      - Gradually pour in the water while stirring continuously to form a smooth batter. Allow the batter to rest for approximately 10 minutes; this will help it thicken slightly.

        Cook the Flatbread:

          - Preheat a non-stick skillet over medium heat and add a drizzle of olive oil to prevent sticking.

            - Pour half of the prepared batter into the hot skillet, using a spatula to spread it evenly into a circular shape.

              - Cook for 3 to 4 minutes, or until the edges begin to lift and the bottom is a nice golden brown. Carefully flip the flatbread and cook for an additional 2 to 3 minutes until fully cooked. Transfer to a plate and repeat with the remaining batter to create a second flatbread.

                Preheat Oven:

                  - While the flatbreads cool, preheat your oven to 400°F (200°C) to prepare for baking.

                    Assemble the Pizza:

                      - Line a baking sheet with parchment paper and place the cooked flatbreads on top.

                        - Drizzle a small amount of olive oil over each flatbread for extra flavor.

                          - Evenly sprinkle the halved cherry tomatoes, sliced bell peppers, red onion, crumbled feta cheese, and sliced Kalamata olives over the flatbreads.

                            - Top with fresh spinach leaves and a sprinkle of dried oregano for added taste.

                              Bake:

                                - Transfer the baking sheet to the preheated oven and bake for 10 to 12 minutes, or until the vegetables are tender and the cheese is slightly golden and bubbly.

                                  Garnish and Serve:

                                    - Once baked, remove the flatbread pizzas from the oven and let them cool for a moment. Garnish generously with fresh basil leaves before slicing.

                                      - Cut into wedges to serve warm, enjoying each bite of this vibrant Mediterranean creation.
