Ingredients

1 ½ cups rolled oats

1 cup pecans, chopped

½ cup almond flour

½ cup almond butter (or any nut butter of your choice)

⅓ cup pure maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon baking powder

¼ teaspoon salt

¼ cup dried cranberries or raisins (optional)

¼ cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, ensuring that there’s an overhang on two sides, which will help with easy removal later.

Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, chopped pecans, almond flour, ground cinnamon, baking powder, and salt. Mix the dry ingredients thoroughly until evenly combined.

Mix Wet Ingredients: In a separate bowl, combine the almond butter, pure maple syrup, melted coconut oil, and vanilla extract. Whisk together until the mixture is smooth and fully blended.

Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir until everything is well incorporated. Optionally, fold in the dried cranberries or raisins and dark chocolate chips for an extra burst of flavor and texture.

Transfer to Baking Dish: Pour the combined mixture into your prepared baking dish. Use a spatula or the back of a spoon to evenly press the mixture down, ensuring it fills the corners and leaves no gaps.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes. You’ll want to keep an eye out for the edges turning a lovely golden brown and test doneness by inserting a toothpick into the center, which should come out mostly clean.

Cool and Slice: Once baked, remove the dish from the oven and allow it to cool in the pan for about 10 minutes. Carefully lift the bars out using the parchment paper overhang, and transfer them to a wire rack to cool completely before slicing into bars.

Store: To keep them fresh, store the breakfast bars in an airtight container at room temperature for up to one week, or refrigerate for extended freshness.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 16 bars

                    - Presentation Tips: For a beautiful presentation, consider drizzling some extra maple syrup over the sliced bars and topping them with a sprinkle of chopped pecans before serving. Enjoy your delicious breakfast bars!
