Loaded Cheddar Cauliflower Soup

1 large head of cauliflower, cut into florets

1 medium yellow onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk (or unsweetened almond milk)

2 cups sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1 teaspoon smoked paprika

1/2 teaspoon ground black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

Salt, to taste

4 slices of bacon, cooked and crumbled (optional, for garnish)

1/4 cup green onions, finely chopped (for garnish)

Extra shredded cheddar cheese for topping

Instructions
 

Sauté the Aromatics: In a large pot, pour in a splash of olive oil and heat over medium. Once the oil is shimmering, add the diced onion. Sauté for about 5 minutes, or until the onion becomes translucent. Next, stir in the minced garlic and cook for an additional minute, allowing the aromatics to become fragrant.

    Cook the Cauliflower: Introduce the cauliflower florets into the pot and then pour in the vegetable broth. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 15-20 minutes, or until the cauliflower is fork-tender.

      Blend the Soup: Once the cauliflower is tender, carefully use an immersion blender to puree the soup until it reaches a smooth consistency. If you are using a countertop blender, allow the soup to cool slightly before transferring it in batches for blending, then return it to the pot.
