Lemon Garlic Roasted Potatoes Green Beans

1.5 lbs baby Yukon gold potatoes, halved

8 oz fresh green beans, trimmed

3 tablespoons olive oil, divided

4 garlic cloves, minced

Zest and juice of 1 large lemon

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s ready for roasting.

    Prepare the Potato Mixture: In a large mixing bowl, add the halved baby Yukon gold potatoes along with the minced garlic. Pour in 3 tablespoons of olive oil, followed by the zest and juice of one large lemon. Sprinkle in the dried thyme, dried rosemary, salt, and pepper. Using your hands or a spoon, toss everything together until the potatoes are thoroughly coated in the fragrant mixture.

      Roast the Potatoes: Transfer the seasoned potatoes onto a large baking sheet, making sure they’re spread out in a single layer for even cooking. Place the baking sheet in the preheated oven and roast for approximately 20 minutes.

        Add Green Beans: After 20 minutes, carefully remove the baking sheet from the oven. Add the trimmed green beans to the baking sheet, ensuring they’re evenly distributed alongside the potatoes. If desired, drizzle a little extra olive oil over the green beans, then toss everything together to combine.

          Continue Roasting: Place the baking sheet back into the oven and continue roasting for another 15-20 minutes, or until the potatoes are tender and golden-brown, and the green beans are vibrant and slightly crisp. Keep an eye on them to prevent overcooking.
