Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup unsalted butter, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1/4 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, finely chopped

8 slices of baguette or French bread, 1/2-inch thick

1/2 cup shredded mozzarella cheese

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). This will ensure your bread gets perfectly crispy.

Prepare the Bread: Cut the baguette or French bread into 1/2-inch thick slices. Lay the slices flat on a baking sheet. Melt 2 tablespoons of the unsalted butter and brush it lightly over each slice. Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until the slices are golden and crispy. Keep an eye to prevent burning.

Sauté the Shrimp: In a large skillet, melt the remaining 2 tablespoons of butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute, stirring frequently until it becomes fragrant but hasn’t browned.

Flavor the Shrimp: Turn the heat up to medium-high and add the peeled shrimp to the skillet. Season with salt, black pepper, and red pepper flakes (if desired). Cook the shrimp for 2-3 minutes, stirring often, until they turn pink and opaque.

Add Lemon: Once the shrimp are cooked through, reduce the heat to low. Mix in the lemon zest and lemon juice, stirring well to combine the flavors. Let the mixture cook for an additional 1-2 minutes to allow the shrimp to soak up the zesty goodness. Remove the skillet from the heat and fold in the chopped parsley.

Assemble the Toast Cups: Take the toasted bread slices out of the oven and generously place a hearty scoop of the sautéed shrimp mixture on top of each slice, ensuring the shrimp is evenly distributed.

Add Cheese: Sprinkle the shredded mozzarella cheese generously over the shrimp-topped toast cups, making sure the shrimp is well-covered for an indulgent melt.

Bake Again: Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.

Serve: Carefully remove the toast cups from the oven and let them cool for about a minute. For an extra touch, garnish with more fresh parsley if desired. Serve immediately for the best flavor and texture.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 8 toast cups
