1 lb (450g) large shrimp, peeled and deveined

3 tablespoons honey

3 tablespoons low-sodium soy sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 cup jasmine rice (or brown rice)

2 cups broccoli florets

1 red bell pepper, thinly sliced

2 green onions, chopped

Sesame seeds, for garnish

Instructions
 

Cook the Rice: Start by rinsing 1 cup of jasmine or brown rice under cold running water to remove excess starch. In a medium-sized pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot, and allow it to simmer for about 15 minutes (or according to package directions) until the rice is cooked through and all the water has been absorbed.

    Prepare the Honey Garlic Sauce: In a small mixing bowl, whisk together 3 tablespoons of honey, 3 tablespoons of soy sauce, 2 minced garlic cloves, and 1 tablespoon of freshly grated ginger until well combined. Set this flavorful sauce aside for later use.

      Sauté the Vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the broccoli florets and the thinly sliced red bell pepper to the skillet. Sauté the vegetables for approximately 3-4 minutes, stirring frequently, until they are vibrant in color and just tender. Once cooked, remove them from the skillet and set aside.
