1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice, thoroughly rinsed and drained

2 cups low-sodium chicken broth

1 cup broccoli florets (fresh or frozen)

1 bell pepper, diced (any color of your choice)

3 cloves garlic, minced

1 onion, finely chopped

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon apple cider vinegar

2 tablespoons olive oil

1 tablespoon cornstarch mixed with 2 tablespoons of water (optional, for thickening)

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the diced chicken thighs with salt and pepper. Add the chicken to the hot skillet and cook for about 5-7 minutes, or until the pieces are browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

    Sauté the Vegetables: In the same skillet, add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and soft. Add in the minced garlic and cook for an additional minute, until fragrant and golden.

      Combine Ingredients: Stir the diced bell pepper and broccoli florets into the skillet. Continue to stir-fry the vegetables for an additional 2-3 minutes, allowing them to soften slightly.

        Cook the Rice: Add the rinsed jasmine rice to the skillet, mixing it well with the sautéed vegetables. Then, pour in 2 cups of chicken broth, and increase the heat to bring the mixture to a boil.

          Make the Sauce: While the rice is cooking, in a small bowl, whisk together the honey, soy sauce, and apple cider vinegar until well combined.

            Add Chicken and Sauce: Once the broth reaches a boil, lower the heat to a simmer. Return the cooked chicken to the skillet and drape the honey-soy sauce mixture over the chicken and rice. Gently stir to combine all the ingredients.

              Simmer: Cover the skillet with a lid and let it simmer on low heat for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

                Thicken (Optional): If you prefer a thicker sauce, stir in the cornstarch-water mixture gradually, then cook for another 2-3 minutes until the sauce thickens to your liking.
