Ingredients

2 cups rolled oats

1 cup mixed berries (fresh or frozen; strawberries, blueberries, and raspberries work well)

1/2 cup almond butter (alternatively, use peanut butter)

1/3 cup honey or maple syrup

1/4 cup almond milk (or your preferred milk)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts or seeds (such as walnuts or sunflower seeds) for an added crunch

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, allowing some of the paper to hang over the edges for easy bar removal later.

Combine Dry Ingredients: In a spacious mixing bowl, combine the rolled oats, chia seeds, ground cinnamon, and salt. If you’re including chopped nuts or seeds, stir them in at this stage for an extra texture.

Prepare the Wet Mixture: In a separate bowl, mix the almond butter, honey (or maple syrup), almond milk, and vanilla extract together until smooth. If the almond butter is particularly thick, heating it for a few seconds in the microwave can make it easier to incorporate.

Mix Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients bowl. Stir thoroughly until all components are well combined. Gently fold in the mixed berries, taking care to avoid mashing them.

Press the Mixture: Transfer the combined mixture into your prepared baking pan. Press the mixture down firmly using a spatula or your hands, ensuring it forms an even layer. This will help the bars maintain their shape once baked.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges become golden brown and the center feels set to the touch.

Cool and Cut: Once baked, remove the pan from the oven and allow it to cool completely within the pan. After cooling, utilize the overhanging parchment paper to lift the bars out of the pan. Place the bars on a cutting board and slice into squares or rectangles as desired.

Storage Instructions: Enjoy your delicious berry bars right away or store them in an airtight container at room temperature for up to a week, or refrigerate for extended freshness.
