4 whole wheat tortillas

1 cup shredded low-fat cheese (choose cheddar or a Mexican blend)

1/4 cup corn kernels (can be fresh or frozen)

1/4 cup black beans, rinsed and drained

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

1/4 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Olive oil spray for a crispy finish

Optional: salsa and Greek yogurt for serving

Prep the Veggies: In a large mixing bowl, combine the chopped bell peppers, finely chopped spinach, corn, and black beans. Season the mixture with garlic powder, cumin, paprika, salt, and pepper. Toss everything together thoroughly until the veggies and beans are well-coated in the seasonings.

    Assemble the Quesadillas: On a clean, flat surface, take one tortilla and sprinkle half of the cheese evenly over one half. Spoon a generous portion of the prepared veggie mixture on top of the cheese, ensuring an even spread. Follow with a sprinkle of the remaining cheese over the veggies. Fold the tortilla in half carefully to form a half-moon shape. Repeat this process with the remaining tortillas.
