Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 medium zucchini, diced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

4 whole-grain or spinach tortillas

1 cup fresh spinach leaves

½ cup cherry tomatoes, halved

½ avocado, sliced

¼ cup Greek yogurt (or sour cream)

Fresh cilantro, chopped (optional, for garnish)

Instructions

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion, cooking for about 3-4 minutes until it softens and becomes translucent. Stir in the minced garlic, sautéing for an additional minute until fragrant.

Add the Veggies: Incorporate the diced bell pepper and zucchini into the skillet. Sauté the mixture for 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

Season the Mixture: Add the ground turkey to the skillet. Use a spatula to break it apart as it cooks, ensuring even browning. Continue cooking for approximately 7-8 minutes, or until the turkey is browned and cooked through with no pink remaining.

Incorporate Spices: Once the turkey is cooked, sprinkle in the ground cumin, chili powder, smoked paprika, and season with salt and black pepper. Stir thoroughly to combine and allow the mixture to cook for another 2 minutes, letting the spices fully infuse the meat and veggies.

Prepare the Wraps: Lay the tortillas flat on a clean surface. Begin by placing a layer of fresh spinach leaves at the center of each tortilla, followed by a generous spoonful of the turkey and veggie mixture.

Add Toppings: Enhance each taco wrap by adding halved cherry tomatoes and slices of avocado. Finish with a dollop of Greek yogurt on top for creaminess.

Wrap it Up: Carefully fold in the sides of each tortilla over the filling. Starting from the bottom, tightly roll up the tortilla to create a neat wrap.

Serve: Slice the wraps in half diagonally for a visually appealing presentation. Optionally, sprinkle with fresh chopped cilantro for added color and flavor.

Enjoy your vibrant and nutritious turkey and veggie taco wraps!
