Ingredients

2 cups mixed leafy greens (such as spinach, arugula, and kale)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup shredded carrots

1/2 cup bell peppers, diced (any color you prefer)

1/2 cup corn (fresh or canned)

1/4 cup red onion, thinly sliced

1 ripe avocado, diced

1/4 cup feta cheese, crumbled (optional)

1/4 cup sunflower seeds or pumpkin seeds (for added crunch)

1/4 cup fresh cilantro or parsley, finely chopped

Salt and pepper to taste

For the Dressing:

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or pure maple syrup

1 teaspoon Dijon mustard

1 clove garlic, finely minced

Salt and pepper to taste

Instructions

Prepare the Greens: In a large mixing bowl, add the mixed leafy greens to form a vibrant base for your salad.

Chop the Veggies: Gently fold in the halved cherry tomatoes, diced cucumber, shredded carrots, diced bell peppers, corn, and thinly sliced red onion. Toss the ingredients well to mix.

Add Avocado & Feta: Carefully incorporate the diced avocado and optional crumbled feta cheese, taking care not to mash the avocado pieces.

Toast the Seeds: In a dry skillet over medium heat, toast the sunflower or pumpkin seeds for about 3-4 minutes, stirring frequently until they are golden and aromatic. Add the toasted seeds to the salad for an extra crunch.

Make the Dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, minced garlic, and a pinch of salt and pepper until well combined and emulsified.

Dress the Salad: Drizzle the prepared dressing over the salad mixture and gently toss with a large spoon or salad tongs until all the ingredients are evenly coated.

Garnish: Top the salad with the freshly chopped cilantro or parsley for a burst of flavor. Taste and adjust the seasoning with additional salt and pepper if needed.

Serve or Pack: Enjoy your salad immediately or portion it into lunch containers for a nutritious, portable meal. Enjoy every colorful bite!
