2 large boneless, skinless chicken breasts

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon extra-virgin olive oil

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

4 whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 medium cucumber, thinly sliced

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

Fresh herbs (such as basil or parsley) for garnish

Instructions
 

Marinate the Chicken: In a shallow bowl, combine the Dijon mustard, honey, olive oil, garlic powder, and a pinch of salt and pepper. Mix thoroughly until well combined. Add the chicken breasts to the marinade, ensuring they are completely coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor absorption.

    Cook the Chicken: Preheat a grill pan or a non-stick skillet over medium-high heat. Remove the chicken breasts from the marinade, allowing excess marinade to drip off. Place the chicken in the heated pan and cook for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked with no pink remaining. Once cooked, remove from heat and let the chicken rest for 5 minutes before slicing it into thin strips.

      Prepare the Wraps: While the chicken rests, lay the whole wheat tortillas flat on a clean surface or large cutting board. Start layering by placing a handful of fresh spinach leaves into the center of each tortilla, followed by the sliced cucumber, avocado, cherry tomatoes, feta cheese (if using), and finally, the sliced chicken.

        Roll the Wraps: Carefully fold the sides of the tortilla inward to secure the fillings. Starting from the bottom, roll the tortilla up tightly towards the top, creating a secure wrap. Repeat this process for the remaining tortillas and their fillings.

          Serve: To enhance visual appeal, cut each wrap in half diagonally and arrange them on a serving platter. Garnish with a sprinkle of fresh herbs. For an extra touch, serve with additional honey mustard dressing on the side for dipping.
