1 lb ground chicken

1 cup roasted Hatch green chiles, chopped (fresh or frozen)

1 cup shredded carrots

1/2 cup chopped green onions

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp black pepper

1 tsp salt

1/4 cup cream cheese, softened to room temperature

12 egg roll wrappers

Vegetable oil for frying

Sweet chili sauce (for dipping)

Cook the Chicken: In a large skillet, heat over medium heat and add the ground chicken. Cook the chicken, breaking it up with a spatula until it’s browned and cooked through, about 5-7 minutes. Be sure to drain any excess fat to keep the filling from becoming greasy.

    Combine Vegetables: To the skillet with the cooked chicken, add the chopped Hatch green chiles, shredded carrots, chopped green onions, and minced garlic. Stir everything together and cook for an additional 3-4 minutes, or until the vegetables have softened.

      Season the Mixture: Sprinkle in the ground cumin, smoked paprika, black pepper, and salt. Mix thoroughly and allow to cook for a further 2-3 minutes to help the spices bloom. Remove the skillet from heat and let the mixture cool slightly.

        Incorporate Cream Cheese: Once the chicken and vegetable mixture has cooled to a comfortable temperature, add the softened cream cheese. Stir until all ingredients are thoroughly combined and the cream cheese is fully incorporated.
