Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lime juice

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon freshly cracked black pepper

1 cup roasted Hatch green chiles, finely chopped

For the Rice:

1 cup jasmine rice (or substitute with brown rice for a heartier option)

2 cups chicken broth (or water for a lighter flavor)

1 teaspoon freshly grated lime zest

1 teaspoon salt

Toppings:

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (can be fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned, drained)

1 ripe avocado, sliced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, finely chopped

Lime wedges for serving

Optional: sour cream or Greek yogurt for a creamy garnish

Instructions

Marinate the Chicken:

    - In a medium mixing bowl, combine the olive oil, lime juice, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.

      - Add the chicken thighs along with the chopped Hatch green chiles, ensuring each piece is thoroughly coated in the marinade.

        - Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, allowing the flavors to penetrate (up to 2 hours for an even richer taste).

          Cook the Rice:

            - Rinse the jasmine rice under cold running water until the water appears clear. This helps remove excess starch for fluffier rice.

              - In a medium saucepan, combine the rinsed rice, chicken broth (or water), lime zest, and salt. Bring to a vigorous boil over medium-high heat.

                - Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for approximately 15-20 minutes, or until all the liquid is absorbed and the rice is tender. After cooking, remove from heat and allow it to sit, covered, for 5 minutes.

                  Cook the Chicken:

                    - Preheat a grill pan or large skillet over medium-high heat. Remove the marinated chicken from the bowl, allowing excess marinade to drip off.

                      - Place the chicken in the hot pan and cook for about 7-8 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Ensure you have a nice sear.

                        - Once cooked, transfer the chicken to a cutting board, and let it rest for a few minutes before slicing it into bite-sized pieces.

                          Assemble the Burrito Bowls:

                            - In each serving bowl, start with a generous portion of the cooked rice as the base.

                              - Layer on black beans, sweet corn, diced tomatoes, and the sliced chicken pieces.

                                - Top with avocado slices, a sprinkle of cheddar cheese, and a handful of fresh cilantro for that burst of flavor.

                                  - Serve with lime wedges on the side and a dollop of optional sour cream or Greek yogurt for a creamy finish.

                                    Enjoy:

                                      - Encourage everyone to mix all the vibrant ingredients together to savor the delicious flavors of your Spicy Hatch Chili Chicken Burrito Bowls!
