2 cups cubed butternut squash

1 cup broccoli florets, chopped

1 cup carrot slices

1 cup bell peppers, chopped (any variety)

1 medium onion, diced

3 cloves garlic, minced

1 cup cooked quinoa

1 cup vegetable stock

1 tsp dried thyme

1 tsp dried oregano

Salt and black pepper, to taste

1 1/2 cups shredded cheddar cheese

1 cup breadcrumbs

2 tbsp olive oil

1/2 cup grated Parmesan cheese

1 egg, lightly beaten (optional for binding)

Instructions
 

Begin by preheating your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a thin layer of olive oil.

    In a large pan over medium heat, warm the olive oil. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, which should take around 3-4 minutes.

      Introduce the cubed butternut squash, sliced carrots, and chopped bell peppers to the skillet. Cook for an additional 5-7 minutes until the vegetables start to soften.

        Incorporate the broccoli, cooked quinoa, vegetable stock, thyme, oregano, salt, and pepper into the skillet. Stir thoroughly and allow the mixture to simmer for about 10 minutes, enabling the flavors to combine.

          Pour the vegetable mixture into the prepared baking dish, ensuring it is spread out evenly.

            In a different mixing bowl, combine the breadcrumbs, shredded cheddar cheese, grated Parmesan cheese, and beaten egg (if using). Mix well until all items are thoroughly combined.

              Evenly distribute the cheesy breadcrumb mixture over the vegetable layer in the baking dish.

                Place the dish in the preheated oven and bake for 25-30 minutes, or until the crust turns a lovely golden brown and becomes crispy.
