Grilled Chicken Bruschetta Pasta

12 oz penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil (for grilling chicken)

Salt, to taste

Freshly ground black pepper, to taste

1 teaspoon Italian seasoning

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 tablespoon balsamic vinegar

1/2 cup fresh mozzarella balls, halved

Freshly grated Parmesan cheese, for serving

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions, ensuring it reaches an al dente texture. Once cooked, drain the pasta in a colander, reserving about 1/2 cup of the starchy pasta water to enhance sauce consistency.

    Prepare the Chicken: While the pasta is cooking, take the chicken breasts and coat them with olive oil. Season generously with salt, freshly ground black pepper, and Italian seasoning. Allow the chicken to marinate for about 10 minutes to absorb the flavors.

      Grill the Chicken: Heat a grill or a grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill. Grill each side for approximately 6-7 minutes or until the internal temperature reaches 165°F. After cooking, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.

        Prepare the Bruschetta Topping: In a medium bowl, mix together the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, a tablespoon of olive oil, and a pinch of salt and pepper. Stir well and allow the mixture to sit for about 10 minutes. This resting period helps the flavors to meld and intensify.
