1 cup shredded cabbage

1 cup shredded carrots

1 cup bean sprouts

1/2 cup finely chopped green bell pepper

1/2 cup finely chopped green onions

2 tablespoons finely chopped fresh cilantro

2-3 green chilies, finely chopped (adjust according to your heat preference)

2 teaspoons soy sauce

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

1 package of egg roll wrappers

Oil for frying (enough for about 2 inches in your frying pan)

Prepare the Filling: In a large mixing bowl, combine the shredded cabbage, shredded carrots, bean sprouts, chopped green bell pepper, chopped green onions, fresh cilantro, and finely chopped green chilies. Pour in the soy sauce, and sprinkle the garlic powder, ginger powder, salt, and pepper. Mix thoroughly until all the vegetables are evenly coated in the sauce and spices.

    Wrap the Egg Rolls: Place an egg roll wrapper on a clean, flat surface with one corner facing you (like a diamond shape). Spoon about 2 tablespoons of the prepared veggie filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in the two side corners to encase the filling securely. Roll the wrapper tightly towards the top corner and seal the edge with a dab of water to prevent it from unrolling. Repeat this process with the remaining filling and wrappers.

      Heat the Oil: In a deep frying pan or pot, pour in enough oil to reach a depth of about 2 inches and heat over medium heat. To check if the oil is hot enough, drop in a small piece of dough; it should sizzle and rise to the surface immediately.
