1 pound breakfast sausage (choose mild or spicy based on your taste preference)

1 (30-ounce) package frozen hashbrowns (or substitute with 4 cups of homemade hashbrowns)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped green onions (optional, for garnish)

Preheat the Oven: Set your oven to 350°F (175°C) to warm up while you prepare the casserole.

    Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage. Use a spatula to crumble it as it cooks. Continue to cook until it is browned and no longer pink in the center. Once cooked, drain any excess fat from the skillet and set the sausage aside.

      Prepare the Hashbrowns Mixture: In a large mixing bowl, combine the frozen hashbrowns, the cooked sausage, shredded cheddar cheese, and shredded mozzarella cheese. Stir thoroughly until all ingredients are evenly mixed.

        Create the Egg Mixture: In a separate bowl, crack the 6 large eggs and add the milk. Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk the mixture until it is smooth and well combined.
