1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional for a spicy kick)

1 cup mixed nuts (such as almonds, cashews, and walnuts)

1/2 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1 tablespoon fresh parsley, chopped (for garnish)

Preheat the Oven: Set your oven to 400°F (200°C) and allow it to preheat while you prepare the other ingredients.

    Prepare the Chickpeas: After rinsing the chickpeas to remove any canning liquid, spread them out on a clean kitchen towel. Pat them dry thoroughly to help achieve that perfect crunch during roasting.

      Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with 2 tablespoons of olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and cayenne pepper (if using). Toss the mixture gently until all the chickpeas are evenly coated with the seasoning.
