1 block (14 oz) firm tofu, pressed and drained

1 cup panko breadcrumbs

½ cup grated Parmesan cheese (for a vegan option, substitute with nutritional yeast)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

4 large flour tortillas or wraps

2 cups mixed greens (such as spinach and arugula)

½ cup cherry tomatoes, halved

¼ cup ranch dressing or your preferred sauce
