Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups vegetable broth (or water)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

½ teaspoon paprika

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 green onions, sliced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the Rice: In a medium saucepan, pour in 2 cups of vegetable broth and bring to a rapid boil over medium-high heat. Once boiling, add the jasmine rice, stir briefly, and then cover the pot with a lid. Reduce the heat to low and let it simmer for approximately 15 minutes until the rice is tender and the liquid has been absorbed. After cooking, remove the saucepan from the heat but keep it covered for an additional 5 minutes to allow the rice to steam. Finally, fluff the rice with a fork to separate the grains.

Prepare the Shrimp: As the rice cooks, season the shrimp with salt, pepper, and paprika. This mixture will enhance the shrimp's natural flavors and add a subtle kick.

Make the Garlic Butter: In a large skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute, just until aromatic. Be careful to stir frequently to prevent the garlic from burning, which can impart a bitter taste.

Cook the Shrimp: Increase the heat to medium-high and add the seasoned shrimp to the skillet. Cook for about 2-3 minutes without stirring until the shrimp are pink and begin to curl. Flip the shrimp over and cook for an additional 1-2 minutes until they are fully cooked through and opaque.

Add Flavor Enhancements: Once the shrimp are done, remove the skillet from heat, and stir in the fresh lemon juice, lemon zest, and red pepper flakes (if using). Gently toss the shrimp in the garlic butter until well-coated, allowing the flavors to meld.

Assemble the Bowls: To serve, scoop the fluffy jasmine rice into each bowl. Generously top the rice with the garlic butter shrimp, ensuring each bowl receives ample sauce for flavor.

Garnish: Finally, sprinkle sliced green onions and fresh parsley over the shrimp for a pop of color and freshness. Serve with lemon wedges on the side, allowing guests to add a bright splash of citrus if desired.

Optional Presentation Tips: For an elegant touch, serve the bowls on a wooden or colorful plate, and arrange the garnishes in a visually appealing manner. A few sprigs of parsley atop the shrimp can add height and a fresh fragrance. Enjoy your meal!
