Garlic Butter Roasted Mushrooms

1 lb (450g) fresh mushrooms (preferably cremini or button)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons extra virgin olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

Salt and freshly ground black pepper to taste

Optional: 1 tablespoon balsamic vinegar for added depth of flavor

    Prepare the Mushrooms: Using a damp cloth, gently clean the mushrooms to remove any dirt, then pat them dry. For larger mushrooms, slice them in half or quarters. Leave smaller ones whole to ensure they retain their shape during cooking.

      Melt the Butter: In a small saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes, stirring frequently until the garlic is fragrant but not browned, to avoid bitterness.

        Combine the Ingredients: In a large mixing bowl, whisk together the melted garlic butter, olive oil, thyme, and a pinch of salt and pepper. If you choose to enhance the flavors with balsamic vinegar, mix it in at this stage.
