Game Day Sheet Pan Nachos with a Twist

1 large bag of tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced black olives

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup diced red onion

1 ripe avocado, diced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 tbsp taco seasoning

1 jalapeño, thinly sliced (optional for some heat)

1 lime, cut into wedges

Instructions
 

Begin by preheating your oven to 400°F (200°C).

    On a large sheet pan, arrange the tortilla chips in a single layer.

      In a medium mixing bowl, combine the black beans, diced tomatoes, corn, red onion, and taco seasoning. Stir until thoroughly mixed.

        Spread the black bean mixture evenly over the tortilla chips.

          Generously sprinkle the shredded cheddar and Monterey Jack cheeses over the entire surface.

            If desired, add the sliced jalapeños for an additional spice.

              Place in the preheated oven and bake for approximately 10-12 minutes or until the cheese is melted and bubbling.

                Once done, carefully take the pan out of the oven. Top the nachos with diced avocado, dollops of sour cream, and sliced black olives.

                  Add a finishing touch with a sprinkle of fresh cilantro and arrange lime wedges around the nachos for squeezing.
