Ingredients

2 cups Greek yogurt (plain or vanilla)

1 ripe mango, peeled and finely diced

1 cup fresh raspberries

2-3 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

A pinch of salt

Optional: 1 tablespoon fresh lime juice for an extra zesty kick

Instructions

Blend the Base: In a high-speed blender, combine the Greek yogurt, honey or maple syrup, vanilla extract, a pinch of salt, and lime juice (if using). Blend the mixture on high speed until it reaches a smooth and creamy consistency, scraping down the sides as needed. This will create a deliciously tangy base for your yogurt discs.

Prepare the Fruits: Gently fold in the diced mango and fresh raspberries into the blended yogurt mixture. Use a spatula to ensure the fruits are evenly distributed throughout the yogurt without completely breaking down the berries, maintaining their beautiful shape and texture.

Disc Formation: Line a baking sheet or a flat dish with parchment paper to prevent sticking. Using a tablespoon or filling a silicone mold, scoop the yogurt mixture onto the parchment, forming small discs approximately 2-3 inches in diameter. Ensure there’s enough space between each disc to allow for even freezing.

Freeze: Carefully transfer the baking sheet or dish to the freezer and let the discs freeze for at least 4-6 hours, or until they are fully solidified and firm to the touch.

Serve: Once frozen, gently pull the discs away from the parchment paper, taking care not to break them. Serve immediately for a refreshing treat or store the discs in an airtight container in the freezer for up to 2 weeks for a quick snack.

Garnish (Optional): For an added touch of flavor and crunch, sprinkle crushed pistachios or toasted coconut flakes over the top of the discs just before serving. This will enhance the presentation and provide a delightful textural contrast.
