2 large ripe mangoes, peeled and chopped

1 cup plain Greek yogurt

1/2 cup honey or agave syrup (adjust based on desired sweetness)

1 tablespoon freshly squeezed lime juice (approximately 1 lime)

1/2 teaspoon pure vanilla extract

A pinch of sea salt

Optional: Freshly chopped mint for garnish

Prepare the Mango: In a blender or food processor, add the chopped mangoes. Blend until completely smooth and creamy. If desired, reserve a small portion of the chopped mango before blending for swirling into the pops later.

    Mix the Yogurt Base: In a medium-sized mixing bowl, combine the plain Greek yogurt, honey or agave syrup, freshly squeezed lime juice, vanilla extract, and a pinch of sea salt. Whisk together until all ingredients are thoroughly mixed and the mixture is smooth.

      Create the Mango-Yogurt Blend: Gently fold the smooth mango puree into the yogurt mixture using a spatula. Be careful to leave some swirls of mango for a beautiful marbled effect, which adds both flavor and visual appeal.

        Fill the Popsicle Molds: Carefully pour the mango-yogurt mixture into popsicle molds, filling them about three-quarters full. If you reserved any pieces of chopped mango, drop a few into each mold to enhance the texture and flavor.

          Insert Sticks: If your molds come with a removable insert for the sticks, place them inside now. If not, insert wooden sticks or plastic spoons into the center of each mold.

            Freeze Until Solid: Transfer the filled molds to your freezer. Allow them to freeze for a minimum of 4-6 hours, but for the best results, freeze overnight until they are completely solid.

              Unmold and Serve: To remove the pops from the molds, run warm water over the outside of each mold for a few seconds to help loosen them. Carefully pull the pops out, and enjoy! For an extra refreshing touch, sprinkle some freshly chopped mint on top of each pop before serving.
