2 cups ripe mango flesh, pureed (approximately 2 large mangos)

1/2 cup freshly squeezed lime juice (about 4 medium limes)

1/2 cup coconut cream (or full-fat coconut milk for a richer flavor)

1/4 teaspoon sea salt

1 tablespoon cornstarch (optional, for a firmer texture)

Fresh mint leaves for garnish (optional)

Prepare the Mango: Begin by peeling the ripe mangoes and cutting them into small chunks. Use a food processor to blend the mango until it reaches a smooth and creamy consistency. Measure out 2 cups of the mango puree for the recipe.

    Mix the Ingredients: In a large mixing bowl, combine the mango puree with the freshly squeezed lime juice, lime zest, honey or agave syrup, coconut cream, and sea salt. If you desire a firmer texture in your bars, incorporate the cornstarch at this stage. Stir the mixture thoroughly until it is completely combined and smooth. Taste the mixture and adjust the sweetness if necessary by adding more honey or agave.

      Prepare the Baking Dish: Line a 9x9 inch square baking dish with parchment paper, making sure to leave some overhang on the edges to facilitate easy removal later. Pour the mango mixture into the lined dish and spread it evenly across the surface with a spatula.
