Ingredients

4 medium lemons (juiced and zested)

1 cup water

2/3 cup granulated sugar (or substitute with honey for a healthier alternative)

1 cup fresh strawberries, hulled and diced

1 cup fresh blueberries

1 cup fresh diced pineapple

1 ripe banana, sliced

Fresh mint leaves (for garnish)

Instructions

Make the Lemonade Base: In a medium saucepan, combine 1 cup of water and 2/3 cup of sugar (or honey) over medium heat. Stir continuously until the sugar is completely dissolved. Once dissolved, remove the saucepan from the heat and allow the mixture to cool for about 10 minutes.

Combine Lemon Juice: Once the sugar water has cooled, add the freshly squeezed lemon juice and the lemon zest to the mixture. Stir well to combine all the ingredients. Taste the mixture and adjust the sweetness if needed by adding more sugar or honey to your preference.

Prepare the Fruit: In a large mixing bowl, combine the diced strawberries, blueberries, diced pineapple, and sliced banana. Gently toss the fruit with a spoon to mix them together evenly.

Assemble the Cups: Carefully pour the prepared lemonade mixture over the fruit in the bowl, making sure all pieces are well coated. If desired, you may reserve a small amount of the lemonade mixture to use as a topping later.

Fill the Cups: Using small paper cups, plastic cups, or any molds of your choice, evenly spoon the fruit mixture into the cups. If you saved some lemonade, pour a little on top of each filled cup for extra zest.

Freeze: Place the filled cups in the freezer and allow them to freeze for at least 4-6 hours or until they are completely solid.

Serve: After the cups have frozen, remove them from the freezer and let them sit at room temperature for a few minutes to soften slightly. Garnish each cup with fresh mint leaves before serving for an added burst of color and flavor. Enjoy your refreshing frozen lemonade fruit cups!
