6 ripe kiwis, peeled and roughly chopped

1 cup coconut water (or substitute with regular water)

1 tablespoon honey or agave syrup (adjustable based on desired sweetness)

Juice of 1 fresh lime

1/2 cup fresh mint leaves (optional, for an invigorating flavor)

Additional kiwi slices and mint leaves for garnish (optional)

Prepare the Kiwi Mixture: In a high-powered blender, add the chopped kiwis, coconut water, honey or agave syrup, and freshly squeezed lime juice. Blend thoroughly until the mixture is smooth. For those who prefer a hint of texture, blend only until ingredients are combined, pulsing a few times instead of completely blending.

    Incorporate the Mint: If using fresh mint, add the mint leaves to the blender. Pulse the blender a few times to mix the mint into the kiwi blend, ensuring that some small mint pieces remain for an extra burst of freshness.

      Taste and Sweeten: Taste the mixture to determine if additional sweetness is desired. If so, add more honey or agave syrup and blend again briefly to combine.

        Fill the Popsicle Molds: Carefully pour the kiwi mixture into popsicle molds, leaving a small space at the top of each mold to allow for expansion during freezing.

          Garnish for Visual Appeal: For added aesthetic charm, place slices of kiwi and a few mint leaves into each mold before freezing, if desired.
