1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

2 tablespoons melted coconut oil (or unsalted butter for richness)

A pinch of salt

Prepare the Crust: In a medium-sized mixing bowl, combine the graham cracker crumbs, melted coconut oil, and a pinch of salt. Stir until the mixture resembles wet sand, ensuring that all crumbs are coated with the oil.

    Form the Base: Scoop about a tablespoon of the graham cracker mixture and firmly press it into the bottom of each popsicle mold to create an even crust. Use the back of a spoon to ensure it is tightly packed. Place the molds in the freezer for about 15 minutes to allow the crust to set and firm up.

      Make the Filling: In a separate bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice until the mixture is smooth and creamy. Gently fold in the mixed berries, taking care to evenly distribute them without breaking them apart.

        Fill the Molds: Once the crust has set, remove the molds from the freezer. Carefully spoon the yogurt and berry mixture into each popsicle mold, filling them nearly to the top. Leave a small gap to accommodate any expansion that may occur during freezing.

          Insert Sticks: If using standard popsicle sticks, insert them into the molds, ensuring they are centered. For molds with a lid that contains sticks, simply place the lid onto the filled molds.

            Freeze: Position the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until the pops are completely solid and firm to the touch.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for about 10 seconds to loosen them. Gently pull on the popsicle sticks to release the pops from the molds. If desired, sprinkle additional berries on top before serving for an extra pop of color.
