Ingredients

1 cup rolled oats

1 cup almond milk (or your preferred milk)

1/4 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup fresh raspberries (plus extra for garnish)

1/4 cup dark chocolate chips (optional)

1 teaspoon vanilla extract

A pinch of salt

Instructions

Blend the Base: Start by adding the rolled oats, almond milk, honey (or maple syrup), unsweetened cocoa powder, vanilla extract, and a pinch of salt into a blender or food processor. Blend the mixture on high speed until you achieve a smooth and creamy consistency. If you prefer a bit of texture, you can blend it just until combined, allowing some oat bits to remain.

Fold in Raspberries: Next, take the blended mixture and gently fold in the fresh raspberries and dark chocolate chips (if you’re using them). Be careful not to over-mix; you want to maintain some whole raspberries to create lovely swirls and bursts of flavor in your pops.

Prepare the Molds: Pour the raspberry-chocolate mixture evenly into popsicle molds, filling each mold almost to the top but leaving a little space to allow for expansion as the pops freeze.

Insert Sticks: Take popsicle sticks and carefully insert them into the molds, making sure they are centered and stable. If your molds do not come with sticks, wooden coffee stirrers work well as an alternative.

Freeze: Transfer the filled molds to the freezer. Allow them to freeze for at least 4 hours, or until they are completely solid and firm to the touch.

Unmold and Garnish: When you’re ready to enjoy your bliss pops, run warm water over the outside of the molds for about 10 seconds to loosen them. Gently pull the pops out of the molds. For a decorative finish, top each pop with whole raspberries and a drizzle of melted chocolate before serving.

Enjoy: Serve immediately and savor the delightful combination of rich chocolate and tart raspberries!
