Ingredients

2 ripe bananas, mashed until smooth

1 cup almond butter (smooth and creamy)

1/2 cup rolled oats

1/3 cup honey or maple syrup (choose to suit your sweetness preference)

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional, for added sweetness and richness)

1/4 cup chopped nuts (e.g., almonds or walnuts) for topping (optional)

Instructions

Prepare the Base: In a large mixing bowl, mash the ripe bananas using a fork or potato masher until you achieve a smooth, lump-free consistency.

Combine Ingredients: Add the almond butter, honey (or maple syrup), vanilla extract, and salt to the mashed bananas. Stir the mixture until all ingredients are fully integrated and creamy.

Incorporate Dry Ingredients: Add the rolled oats and ground flaxseed to the banana-almond butter mixture. Mix thoroughly until everything is evenly blended and there are no dry spots.

Add Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they are evenly distributed throughout the mixture without breaking them.

Line the Pan: Prepare an 8x8 inch baking dish by lining it with parchment paper. Allow some parchment to hang over the edges for easy removal later.

Spread the Mixture: Transfer the prepared mixture into the lined baking dish, using a spatula to spread it evenly across the surface. Smooth the top to create a uniform layer.

Add Toppings (Optional): If desired, sprinkle the chopped nuts evenly across the top of the mixture. Press them down gently with the spatula to help them adhere.

Freeze the Bars: Place the baking dish in the freezer and allow the bars to freeze for at least 2 hours, or until they are completely firm to the touch.

Cut and Serve: Once frozen, carefully lift the entire slab from the dish using the overhanging parchment paper. Use a sharp knife to cut the frozen mixture into bars or squares according to your preference.

Storage: Store the bars in an airtight container in the freezer, where they will remain fresh for up to 3 months. Enjoy them straight from the freezer, or let them sit for a minute or two to soften slightly before enjoying!
