4 large flour tortillas

1 cup zucchini, diced

1 cup corn (fresh or frozen, thawed if using frozen)

½ cup red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and black pepper, to taste

Cooking spray or a light drizzle of olive oil

Optional: fresh cilantro for garnish; sliced avocado for serving

Prepare the Veggies: In a large mixing bowl, combine the diced bell peppers, zucchini, corn, and red onion. Add the garlic powder, ground cumin, and season generously with salt and black pepper. Mix thoroughly to ensure all the vegetables are evenly coated with the seasonings.

    Assemble the Quesadillas: Lay two tortillas flat on a clean work surface. Start by evenly sprinkling a layer of shredded cheese over each tortilla. Next, distribute the seasoned veggie mixture over the cheese. Top the vegetables with another generous layer of cheese, then carefully place a second tortilla on top of each filled tortilla.
