Ingredients

4 medium zucchinis, spiralized into noodles

2 cups marinara sauce (your choice: store-bought or homemade)

1 cup ricotta cheese

2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). This will ensure your dish bakes evenly.

Prepare Zucchini: Place the spiralized zucchini noodles in a large mixing bowl, sprinkle with a pinch of salt, and let them sit for approximately 10 minutes. This process draws out excess moisture from the zucchini. After 10 minutes, use a clean kitchen towel to pat the noodles dry, absorbing as much moisture as possible.

Mix the Cheese Filling: In a medium-sized mixing bowl, combine the ricotta cheese, egg, 1 cup of shredded mozzarella, grated Parmesan, minced garlic, dried basil, dried oregano, and a generous pinch of salt and pepper. Stir the mixture thoroughly until all ingredients are well incorporated.

Layer the Bake: In a 9x13 inch baking dish, begin by spreading a thin layer of marinara sauce at the bottom. Next, layer half of the zucchini noodles evenly over the sauce. Spoon half of the ricotta cheese mixture on top, followed by half of the remaining marinara sauce. Repeat this layering process with the remaining zucchini noodles, ricotta mixture, and marinara sauce for a beautifully stratified dish.

Top with Cheese: To finish, sprinkle the remaining 1 cup of shredded mozzarella cheese evenly over the top of the layered mixture, ensuring an enticing, cheesy crust.

Bake: Cover the baking dish with aluminum foil to prevent over-browning and place it in the preheated oven. Bake for 25 minutes. After this initial baking time, carefully remove the foil and continue baking for an additional 15-20 minutes, or until the cheese on top is bubbly and golden brown, clear signs of a deliciously baked dish.

Cool and Serve: Once you remove the dish from the oven, allow it to cool for about 10 minutes before serving. This resting time allows the layers to set nicely. For an added touch of freshness, garnish with fresh basil leaves just before serving.
