Ingredients

4 medium bell peppers (any color)

1 lb ground beef (or substitute with ground turkey for a leaner option)

1 cup cooked rice (choose either white or brown for your preference)

1 packet taco seasoning mix

1 can black beans, rinsed and drained

1 cup corn (can use either frozen or canned)

1 cup salsa (mild, medium, or hot depending on your taste)

1 cup shredded cheese (either cheddar or a Mexican blend works well)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Lime wedges (optional, for serving)

Instructions

Preheat the oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the peppers.

Prepare the bell peppers: Carefully slice the tops off the bell peppers and remove the seeds and cores. Set them aside for stuffing later.

Cook the meat: Heat a large skillet over medium heat. Add the ground beef (or turkey) and cook, breaking it apart with a wooden spoon, for approximately 5-7 minutes or until browned and fully cooked. Be sure to drain any excess fat before proceeding.

Incorporate the seasoning: Sprinkle the taco seasoning mix over the cooked meat in the skillet. Stir until evenly coated. If the packet instructions call for water (usually about 1/2 cup), add it at this stage and let the mixture simmer gently for 2-3 minutes to allow the flavors to meld.

Create the filling: In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, and half of the shredded cheese with the seasoned meat. Stir thoroughly until all ingredients are well mixed.

Stuff the peppers: Start filling each hollowed-out bell pepper with the taco filling. Pack them down gently to ensure each pepper is well-filled and stable.

Bake the peppers: Arrange the stuffed peppers upright in a baking dish. Cover the dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes to heat everything through.

Melt the cheese: After 20 minutes, carefully remove the foil. Evenly distribute the remaining shredded cheese on top of each stuffed pepper, then return the dish to the oven uncovered. Bake for an additional 5 minutes, or until the cheese is nicely melted and bubbly.

Garnish and serve: Once they are done baking, allow the peppers to cool for a couple of minutes. Garnish with fresh chopped cilantro for a pop of color and flavor. Serve with optional sour cream and lime wedges on the side for an added burst of zest.
