1 pound ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, including juices

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 cup beef or vegetable broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, sliced jalapeños

Heat the Skillet: Begin by placing a large skillet over medium heat. Once hot, pour in the olive oil and allow it to warm for about a minute.

    Cook the Ground Meat: Add the ground beef or turkey to the skillet. Using a spatula, break it into small pieces as it cooks. Continue cooking for approximately 5-7 minutes, or until the meat is evenly browned and no longer pink.

      Sauté the Vegetables: Stir in the diced onion and sauté for about 3-4 minutes, or until the onion is soft and translucent. Add the minced garlic and cook for an additional minute, or until the garlic is fragrant.

        Add the Spices: Sprinkle the chili powder, ground cumin, smoked paprika, salt, and freshly ground black pepper over the meat and vegetable mixture. Stir thoroughly to ensure the spices are evenly distributed.

          Incorporate the Tomatoes and Beans: Carefully pour in the can of diced tomatoes (making sure to include all the juices), the rinsed kidney beans, black beans, and the broth. Stir until all the ingredients are well combined.

            Simmer the Chili: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat and let the chili simmer uncovered for about 20-25 minutes.
