8 oz (225g) spaghetti or linguine

1 lb (450g) large shrimp, peeled and deveined

4 cloves garlic, finely minced

1/4 cup (60ml) high-quality extra-virgin olive oil

Zest and juice of 1 large lemon

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

1/2 cup (30g) fresh parsley, finely chopped

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring water to a rolling boil and season generously with salt. Add the spaghetti or linguine and cook according to the package directions until al dente, usually about 8-10 minutes. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set aside.

    Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the minced garlic and optional red pepper flakes. Sauté for about 1 minute, stirring constantly to prevent the garlic from burning, until it is fragrant and golden.

      Cook the Shrimp: Increase the heat to medium-high. Carefully add the peeled and deveined shrimp to the skillet in a single layer. Season with salt and pepper. Cook for 3-4 minutes, flipping the shrimp halfway through, until they have turned pink and opaque.
