Easy Caprese Pasta Salad

8 oz (225g) uncooked pasta (farfalline or fusilli for best texture)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained and halved

1 cup fresh basil leaves, roughly chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic glaze

1 clove garlic, minced

Salt and fresh cracked pepper, to taste

Optional: 1/4 tsp crushed red pepper flakes for a hint of spice

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente (firm to the bite). Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process. Set the pasta aside to cool completely.

    Prepare the Fresh Ingredients: While the pasta is cooling, take the cherry tomatoes and mozzarella. Halve the cherry tomatoes and also halve the mozzarella balls. Place both the tomatoes and mozzarella in a spacious mixing bowl.

      Make the Dressing: In a separate small bowl, combine the extra virgin olive oil, balsamic glaze, minced garlic, salt, pepper, and if desired, crushed red pepper flakes. Whisk the ingredients together until they are thoroughly mixed and emulsified.

        Combine the Ingredients: Once the pasta has cooled, transfer it to the bowl containing the cherry tomatoes and mozzarella. Drizzle the dressing over the top. Using a large serving spoon or spatula, toss the mix gently until all ingredients are well coated with the dressing.

          Incorporate the Basil: Add the roughly chopped fresh basil to the pasta salad. Stir gently for a final mix, ensuring the basil is distributed evenly throughout the salad.

            Taste and Adjust Seasoning: Sample a spoonful of the salad to check the seasoning. Adjust the flavors as needed by adding a pinch more salt, pepper, or a splash of olive oil according to your preference.
