4 large whole wheat tortillas

1 cup shredded cheese (options include cheddar, mozzarella, or a flavorful blend)

1 cup mixed bell peppers (sliced into thin strips)

1 cup mushrooms (sliced)

1 cup fresh spinach (roughly chopped)

1 small red onion (sliced)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and black pepper to taste

Optional toppings: salsa, sour cream, slices of avocado, or guacamole

Prep the Vegetables: In a mixing bowl, combine the sliced bell peppers, mushrooms, chopped spinach, and red onion. Drizzle with olive oil and sprinkle in garlic powder, cumin, chili powder, salt, and black pepper. Toss everything well to ensure the vegetables are evenly coated with the seasoning and oil.

    Preheat the Air Fryer: Set your air fryer to 370°F (190°C) and allow it to preheat for approximately 3-5 minutes for optimal cooking.

      Assemble the Quesadillas: Start with one tortilla; on one half, sprinkle a generous layer of cheese, followed by a portion of the vegetable mixture. Top with another layer of cheese for added tastiness, then fold the tortilla over to form a quesadilla. Repeat this process with the remaining tortillas and filling to create a total of 4 quesadillas.

        Cook in the Air Fryer: Optionally, lightly brush or spray the top side of the tortilla with olive oil to achieve a golden crust. In the air fryer basket, place one quesadilla (you can cut it in half if it doesn't fit). Cook at 370°F (190°C) for 8-10 minutes, flipping halfway through the cooking time to ensure even crispiness. The quesadilla is done when the cheese is melted, and the tortillas are golden brown and crispy.

          Repeat Cooking: Once the first quesadilla is done, carefully remove it and keep it warm. Continue cooking the remaining quesadillas in the same manner until all are perfectly cooked.
