Ingredients

1 pound fresh asparagus, with tough ends trimmed off

1/2 cup all-purpose flour (substitute with gluten-free flour if desired)

2 large eggs, beaten until smooth

1 cup Panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and freshly ground black pepper to taste

Olive oil spray for a crispy finish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While it heats, prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Coating Stations: Set up your coating stations by placing three shallow bowls on your countertop:

      - Fill the first bowl with flour.

        - In the second bowl, pour in the beaten eggs.

          - Combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in the third bowl. Mix thoroughly to ensure even distribution of spices.

            Coat the Asparagus:

              a. Take each asparagus spear and first dip it into the flour, rolling it to ensure an even coat.

                b. Next, dip the floured spear into the beaten eggs, allowing any excess egg to drip back into the bowl.

                  c. Finally, roll the asparagus in the Panko mixture, pressing gently to ensure the coating sticks well and is fully covered.

Arrange on Baking Sheet: Lay the coated asparagus fries on the parchment-lined baking sheet in a single layer. Make sure to leave some space between each spear to promote even cooking and crispiness.

Spray for Crispiness: Using an olive oil spray, lightly mist the tops of the asparagus fries. This will promote a golden, crispy texture as they bake.

Bake: Place the baking sheet in your preheated oven and bake for 12-15 minutes. Keep an eye on them; they are done when the asparagus is tender and the coating has turned a beautiful golden brown color with a nice crunch.

Serve: Once baked, remove the asparagus fries from the oven and allow them to cool for about a minute. Serve them warm for the best flavor and crispiness. Pair them with your favorite dipping sauce for a delicious appetizer or side dish!
