To achieve that perfect crispy texture for your Crunchy Cornflake Crusted Tofu, using the right kind of cooking oil is essential. Vegetable oil or canola oil will work wonderfully for frying. These oils have high smoke points, making them ideal for achieving a golden-brown crust without burning the coating. Aim to heat enough oil to cover the bottom of your skillet by approximately 1/4 inch deep.

Ingredients

14 oz firm tofu

2 cups cornflakes, finely crushed

1 cup all-purpose flour

1/2 cup unsweetened plant-based milk (such as almond or soy)

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking oil for frying (such as vegetable or canola)

Fresh herbs (like parsley or cilantro) for garnish (optional)

Instructions

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in paper towels, place it on a cutting board, and set a heavy object (like a skillet or canned goods) on top. Let it press for at least 30 minutes. After pressing, cut the tofu into bite-sized cubes or slabs, based on your preference.

Set Up Breading Station: Prepare three bowls for breading. In the first bowl, combine the all-purpose flour, garlic powder, onion powder, paprika, salt, and black pepper, mixing thoroughly. In the second bowl, whisk together the plant-based milk and soy sauce until smooth. Pour the crushed cornflakes into the third bowl.

Coat the Tofu: Take each tofu piece and start with the flour mixture, ensuring that it is completely coated. Gently shake off any excess flour. Next, dip the tofu into the milk and soy sauce mixture, allowing the excess liquid to drip off. Finally, coat each piece in the crushed cornflakes, pressing lightly to adhere the coating. Repeat this process until all tofu pieces are prepared.

Fry the Tofu: In a large skillet, heat enough cooking oil over medium heat to cover the bottom of the pan (approximately 1/4 inch deep). When the oil is hot, carefully add the cornflake-coated tofu pieces, avoiding overcrowding the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy. Depending on the size of your skillet, you may need to fry the tofu in batches.

Drain and Serve: Once the tofu is perfectly crispy, transfer the pieces to a plate lined with paper towels to absorb any excess oil.

Garnish and Enjoy: Just before serving, consider garnishing your crispy tofu with fresh herbs for added flavor and color. Serve alongside your favorite dipping sauce or a refreshing salad for a delightful meal!
