Ingredients

1 lb boneless, skinless chicken thighs

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste for desired spiciness)

Salt and pepper to taste

1/2 cup buffalo sauce (plus additional for drizzling)

4 large flour tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup shredded cheddar cheese

1/4 cup ranch dressing or blue cheese dressing

Instructions

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

      - In a large mixing bowl, combine the all-purpose flour with garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure even seasoning.

        - Take each chicken thigh, first dredge it in the seasoned flour, then dip it into the beaten eggs making sure it’s fully coated, and finally coat it with panko breadcrumbs, pressing gently to adhere the crumbs firmly.

          Bake the Chicken:

            - Arrange the breaded chicken thighs on the prepared baking sheet. Lightly spray the tops with cooking spray to enhance their crispiness.

              - Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked (an internal temperature of 165°F or 74°C) and the outside is golden brown. Turn the chicken over halfway through to ensure even cooking.

                Buffalo Sauce Toss:

                  - After baking, remove the chicken from the oven and let it rest for about 2-3 minutes to cool slightly. Cut the chicken into bite-sized pieces for easy wrapping.

                    - In a large bowl, add the cooked chicken pieces and pour the buffalo sauce over them. Toss until all pieces are evenly coated in the spicy sauce.

                      Assemble the Wraps:

                        - On a clean, flat surface, lay out a flour tortilla. Begin layering by adding a generous handful of shredded lettuce, followed by the diced tomatoes, spicy buffalo chicken pieces, a sprinkle of shredded cheddar cheese, and a drizzle of your choice of ranch or blue cheese dressing.

                          - Fold the sides of the tortilla inwards, then roll it tightly from the bottom to the top, ensuring all fillings are enclosed.

                            Serving:

                              - Repeat the assembly process for the remaining tortillas and filling. Use a sharp knife to cut each wrap in half diagonally for easy handling.

                                - Serve the wraps on a platter with additional buffalo sauce on the side for dipping and a light sprinkle of parsley for garnish, if desired.

                                  Enjoy!:
