1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or a light brush of olive oil

Prep the Veggies: Begin by placing the grated zucchini in a clean kitchen towel or cheesecloth. Twist and squeeze to remove excess moisture thoroughly. This step is crucial for ensuring your fritters turn out crispy.

    Mix Ingredients: In a sizeable mixing bowl, combine the drained zucchini, grated carrots, finely chopped bell pepper, and onion until well mixed. Add in the whole wheat breadcrumbs, grated cheese, beaten egg, garlic powder, onion powder, paprika, salt, and pepper. Stir the mixture thoroughly until you achieve a sticky and cohesive batter.

      Shape the Fritters: With your hands, take about a tablespoon of the mixture and shape it into small patties or fritters. You should aim for around 12-15 fritters of equal size for even cooking.

        Preheat Air Fryer: Set your air fryer to 380°F (193°C) and preheat for approximately 3-5 minutes.

          Air Fry the Fritters: Lightly coat the air fryer basket with cooking spray or brush it with a small amount of olive oil.
