2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for added heat)

1/2 cup all-purpose flour

2 large eggs, beaten

8 small corn tortillas

1 cup shredded red cabbage

1/2 cup cherry tomatoes, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper to taste

Prepare the Avocados: Carefully scoop out the flesh from the avocado halves, ensuring you keep the skin intact for serving. Slice the avocado flesh into thick, even slices. Season these slices lightly with salt and pepper for flavor.

    Bread the Avocados: Set up a breading station using three shallow dishes. In the first dish, place the all-purpose flour. In the second dish, whisk the eggs until the yolks and whites are fully blended. In the third dish, combine the panko breadcrumbs, garlic powder, smoked paprika, and optional cayenne pepper for a kick.

      Coat the Avocado Slices: Take each avocado slice and first coat it in the flour mixture, shaking off any excess flour. Next, dip the slice into the beaten eggs, allowing any excess to drip off, and then press it firmly into the panko mixture, ensuring it’s fully covered and adheres well.
