1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) red enchilada sauce

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, finely diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper, to taste

4 cups chicken broth

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped, for garnish

Prep the Ingredients: Gather all your ingredients on a clean work surface. Dice the onion finely and mince the garlic cloves.
